Bacon Egg and Cheese Muffins

Ingredients

3/4 teaspoon honey
1/4 teaspoon sea salt
1 1/4 teaspoons baking powder
3 egg whites (I think 2 would have been plenty)
1/2 cup skim milk
1/4 cup smart balanced butter, melted
6 slices uncured turkey bacon, fully cooked (mine was chopped ins
3 large eggs whisked

Preparation

Pre heat oven to 400 degrees.

Mix flour, honey, salt and baking powder in medium size mixing bowl.

In small mixing bowl whisk egg whites, milk and melted butter.

Make a well in the dry ingredients and pour wet ingredients into dry and mix. Mixture will be clumpy and that is ok. If it is too dry add a little water.

Fill 6 greased muffin tins with a spoonful of batter. If you use whole slices of bacon you would curl them and stand in the muffin tin. My bacon was chopped so I just placed a few pieces in each muffin.

Cover bacon with the scrambled egg. Then top with a little more batter and cheddar cheese.

Bake for 25 minutes.
