pounds whole wheat flour |

quart water |

Step 1 |
In large bowl, mix flour and water thoroughly (consistency should be medium to firm). Let dough rest at least 45 minutes. |
Step 2 |
Put dough in colander. While running cold water, continually squeeze dough to wash out starch from mixture. Though should remain intact in one piece during squeezing. keep rinsing and squeezing until all graininess is gone and water runs clear, 10 to 15 minutes. Cover seitan with water until ready to use. |
