Chicken Thighs With Lemon Artichoke Sauce

Ingredients

1/2 teaspoon salt
1/2 teaspoon of pepper
1 tablespoon olive oil
1 teaspoon oregano
1 lemon, juiced

Preparation

Heat oven to 375.

Sprinkle thighs with salt and pepper and bake for 35 minutes or until cooked through.

Meanwhile, cook garlic in olive oil for a bout 30 seconds or so

And add in the oregano, chicken broth and lemon juice.

Bring to a boil and simmer for 15 - 25 minutes (until reduced to about 3/4 cup.)

Add chopped artichokes and spoon over chicken.
