Baked Bean Creole

Ingredients

1 large onion, chopped
1 garlic clove, crushed
3 celery stalks, sliced
2 tablespoons flour
1 can tomatoes
1 pinch basil
1 pinch rosemary
2 cups cooked beans of your choice
1/2 cup breadcrumbs

Preparation

Saute onions and garlic lightly in oil. Add pepper and celery. Fry for several minutes til tender. Stir in the flour & add tomatoes. Add tomato paste & herbs and beans. Mix in breadcrumbs. Add a little water if too dry. Spoon into oiled casserole and sprinkle breadcrumbs on top. Bake for 30 minutes at 350F.
