Recipe: Cucumber and Red Onion Salad edit

Yield: three to four side servings.

edit Ingredients

1

english cucumber, cut into quarters and chopped

¼

red onion, thinly slivered

3

tablespoons red wine vinegar

4

tablespoons olive oil

pinch of white sugar

1

teaspoon dried dill, crushed between your fingers

sprinkle of garlic powder

2

large pinches of kosher salt

6

grinds black pepper

Step 1

Chop the veggies and dump them in a bowl. Pour everything else on top and stir it to combine. Taste it a few minutes later and adjust the flavors a bit, if necessary. Then I let it sit until dinner time.

edit About Cucumber and Red Onion Salad

This is a slightly enhanced version of a salad I grew up eating for dinner. It was one of my mother's go-to, weeknight salads and she served it with everything from roast chicken to tuna salad. It's quick, easy and also tastes wonderful on sandwiches the next day.
