Scalloped Eggs & Bacon

Can be used for breakfast. 2 tbsp. butter 2 tbsp. flour 1 1/2 c. milk 1/2 c. shredded American cheese 1/2 c. shredded Swiss cheese 6 hard cooked eggs, sliced 10-12 slices bacon, crisp

Crumbled 1 1/2 c. crushed potato chips

Cook onion in butter until tender, but not brown. Stir in flour and add milk at once. Cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more. Add cheese, stir until melted. Place half of sliced eggs in bottom of 10"x6"x2" baking dish; pour half of cheese sauce over. Sprinkle with half of crumbled bacon and half of crushed potato chips. Repeat layers. Bake 350 degrees for 15 to 20 minutes. Makes 6 servings.
