Maple - Candied Arctic Char

1 inch • Arctic Char fillet cleaned and cut into ½ strips
1/4 cup • maple syrup
1 teaspoon • kosher salt
1 teaspoon • cracked black peppercorns
1/2 cup • light brown sugar
1 teaspoon • Liquid smoke

Heat oven to 275°F.

Place char strips in dish,

Pour the sauce over the fillets, completely covering them.

Bake 30 minutes, or until the sugar has caramelized.

NOTE: The Arctic Char could be replace with salmon
.
