Ina's Scalloped Tomato Gratin

Preparation

In a large saute pan, heat olive oil over medium heat.

Add bread cubes to olive oil and toss until coated; saute until golden like a crouton

Add cut tomatoes and cook until the bread absorbs the tomato juices.

Remove pan from heat and pour contents into a large Gratin dish. Add chopped basil and top with ground Parmesan cheese.

Bake in a 350 oven for 30-35 minutes

Of course this recipe is the best with tomatoes and basil from your garden. If you have a nice Farmers Market or a specialty grocer that sells organic veggies, I would reccomend this recipe!
