Light Dijon and Mandarin Orange Chicken Salad

1/2 can mandarin oranges , drained and rough chopped
1/2 teaspoon rice wine vinegar
2 tablespoons almonds, sliced
1 teaspoon honey

I can’t believe it’s been 11 days since I’ve gone to the store for anything but cat food, milk, coffee and wine. It’s true, and my husband can attest to the fact that we have eaten the majority of leftovers and food in the pantry, refrigerator and freezer.

In fact, I was a bit concerned about what I was going to make tonight, given I am very low on fresh fruits, whole grain breads and a large variety of veggies. I do have my veggie garden, but the tomatoes aren’t ready yet, so I’m limited to lettuce, kale and snap peas. Hmmmmm.

Not to worry though! Last night we roasted the last of the chicken on the barbecue and had roasted chicken and salad (big surprise!). Perusing my favorite recipe blogs, I couldn’t find a recipe that I had the ingredients to complete, so I made up my own.

It was either a hit with my hubby because he was tired of eating party leftovers for 10 days, or it was just really good. I prefer to think it was just really good.

This is really a calorie friendly meal that’s easy to make. You give it a try and let me know what you think!

p.s. If I had celery in the house, I would have added some chopped celery for crunch.
