Pork Loin with Peach Puree & Mushroom side

Ingredients

pork loin chop
olive oil
peach
orange
red wine vinegar
salt
pepper
mushrooms
green onion

Preparation

Preheat oven to 375 degrees F

Pan sear all sides of your pork in a frying pan with olive oil until brown, about a minute on each side.

Place pork in oven for 15-20 minutes, or until internal temperature reaches 165 degrees F

Cut into slices.

Place in a food processor, blender or magic bullet: cut-up peach, orange juice and vinegar. If you don't have red wine vinegar, you can substitute red wine and regular vinegar.

Blend well. The mixture will be quite liquidy.

Sautee mixture on medium-high for about 8 minutes or until sauce thickens to a puree consistency.

Place on top of sliced pork

Sautee in a frying pan: mushrooms, olive oil and green onion slices for about 10-15 minutes or until well cooked.

Serve as a side to the pork.
