Ingredients

6 tablespoons olive oil
2 tablespoons lemon juice
3 tablespoons chopped mint
1 pch sugar
1 salt and pepper

Preparation

Beat the oil with the lemon juice mint sugar and salt and pepper to taste until well blended.

Alternatively place all theingredients in a screwtop jar and shake vigorously to combine well before serving.

Set aside for at least 15 minutes to allow the flavors to develop then beat or shake again before using.

This light and refreshing dressing would taste delicious with a cold potato salad or tossed tightly over a salad of chopped apples and herring.
