- 1/2 teaspoon grated orange rind(optional)
- 1 cup whole milk
- 1 can evaporated milk
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 6 eggs
- 3/4 cup sugar
Instructions
Step 1
Beat eggs with 1/3 cup sugar until sugar is dissolved. Add other ingredients. Set aside.
Step 2
Melt remaining sugar in a skillet (or a non-stick 9 inch cake pan) on top of the stove. Stir the sugar gently to help melt it. When it is melted and caramel colored, tilt the pan to coat the sides and bottom of the pan with sugar syrup until sugar cools enough to stop moving.
Step 3
Pour in the egg and milk mixture. Bake in a very slow oven (275-300 degrees) for about 1 1/2 hours or until the custard is set. Shut off the oven and leave the flan inside for about 30 minutes with the door shut. Cool completely in the pan before inverting onto a serving plate. Best when refrigerated several hours.
