Spinach Blueberry Smoothie

Ingredients

Ingredients:
2 cups of fresh blueberries or frozen blueberries thawed
2 cups of fresh spinach, rinsed and dried
2 tablespoons of Welch's 100%% grape juice from concentrate
2 tablespoons water (to help blend ingredients)

Add all the ingredients into a blender and blend for about one minute until all of the spinach is blended well. You don't want any evidence of the spinach to show! If it needs more liquid add a tiny bit of water at a time.

Note: If this is your fist time making this smoothie, you may want to cut the spinach in half to about one cup then slowly add more spinach.

This is a quick and easy way to get some good quality nutrients and antioxidants first thing in the morning. My eight year old and 3 ½ year old love this smoothie. The beautiful deep blue purple pigmentation from the blueberries disguises the pigmentation of the green spinach. Then the sweetness from the Welch's 100% grape juice concentrate masks the flavor of the spinach. When I first made this smoothie for my boys I put it in a colorful plastic PBA free cup with a little bit of Reddy Whip cream topping with some dark chocolate sprinkles and a straw....viola they drank it with no problem. Presentation is everything with children!
