Harvest Moon Salsa
Ingredients
1 1/2 cups
fresh
cranberries
1
small
apple,
peeled and
chopped
1
small
pear,
peeled and
chopped
4 tablespoons
dark brown sugar
1 teaspoon
pure
maple syrup
1/2
zest
of an
orange
1
jalapeno pepper,
finely
chopped
2 tablespoons
fresh
cilantro,
chopped
1 squeeze
of fresh
lime juice
salt
to taste
Preparation
1
Place cranberries, apple and pear into a food processor and pulse to a coarse
chop.

Combine the cranberries, apple, pear,
brown
sugar, maple syrup, orange
zest,
jalapeno, cilantro, lime
juice
and
salt
in a medium-sized bowl.
3
Cover and
chill
overnight.
4
Serve
on rice crackers with
cream
cheese or as an accompaniment pork
dishes.
