Coffee Cream Cake

8 ounces marshmallows
1/4 cup instant coffee combined with 1 c. water
2 cups heavy cream, whipped
1 teaspoon vanilla

1. In a saucepan, place marshmallows, coffee and cocoa mixtures.

5. Line an 8 inch or 9 inch springform with sponge cake or lady fingers.

7. Pour mixture into springform, sprinkle top with shaved chocolate and refrigerate overnight. Yield: 8 to 10 generous portions.

8. For a birthday cake, pipe rosettes of whipped cream onto a greased cookie sheet (one for each year and one for good luck). With a birthday cake candle, make an indentation in the center of each rosette. Set cookie sheet in freezer. When ready to serve, place frozen rosettes onto cake and set candles in each one.
