Bacon and Mozzarella Stuffed Mushrooms

Ingredients

1 pound large mushrooms
3 slices bacon, chopped fine
1/2 cup chopped onions
1 clove garlic, finely chopped
1 cup shredded mozzarella cheese
1/2 cup soft breadcrumbs
1/4 teaspoon oregano
1/4 teaspoon salt
butter

Preparation

Remove stems from mushrooms and finely chop.

Put bacon, stems, onion, and garlic in a frying pan and saute in small amount butter or olive oil.

Cook until onion is soft, then drain.

Stir in remaining ingredients.

Stuff mushroom caps with this mixture.

Place a small pat of butter into the bottom of each compartment of a muffin tin. Place a mushroom in each tin.

Place muffin tins in the oven and bake at 375F degrees for 10 minutes.

I'll try this recipe as a make ahead snack for a tailgating snack. I think I can pull it off on a grill. I'll let you know, regardless if my team wins.
