Meyer Lemon Bars

Ingredients:
1/2 cup unsalted butter (room temperature)
1/8 teaspoon salt
2 large eggs (room temperature)
1 cup sugar
cup Meyer lemon juice
3 tablespoons all purpose flour

Cream the butter and sugar in a bowl.

Mix in the flour and salt until it comes together.

Press it down into a greased 8 inch square baking pan.

Bake in a preheated 350F oven until golden brown, about 20 minutes.

Beat the eggs and sugar until smooth.

Mix in the lemon juice and zest.

Mix in the flour.

Pour the mixture onto the crust.

Bake in a preheated 350F oven until set, about 20 minutes.

Let cool and sprinkle with confectioners sugar.
