My Chili Con Carne

Preparation

Heat the oil and fry the onion, garlic and red pepper for a minute or two. When ready add the cinammon stick.

Add the beef and fry until it gets some color.

Add the tomatoes, a bit of water and salt and pepper to taste.

Let it simmer for around 30-45 min (low fire). Remember to keep it moist adding water as needed.

Add the beans and the corn.

Let it simmer for an additional 10-15 min.

About

My own version of a Mexican classic. I have no idea of how authentic this is. I'm afraid it may have really nothing to do with original Mexican recipes. I like to eat it over nachos with lettuce, tomatoes and cheese.
