The Best Coconut Cream Pie

Ingredients

1 cup sugar
4 tablespoons corn starch
1/2 teaspoon salt
4 lg eggs-separated
2 cups milk
1 cup coconut
2 teaspoons vanilla
2 tablespoons butter

Preparation

Double Boiler~ mix sugar, corn starch, and salt together in pot

Add evap. milk and mix together

Beat in egg yolks one at a time and then add milk

Stir constantly till mixture becomes thick, remove from heat

Add coconut, vanilla, and butter: pour into baked pie shell

For the meringue~

Egg whites from separated eggs

Tsp vanilla

Tsp sugar

In a stand mixer, add whites, tartar

Beat till 1/2 way stiff and add vanilla

When almost stiff, add sugar and mix till stiff peaks form

Pour and spread over custard and sprinkle with coconut

Bake in oven at 400 till golden brown on the top!
