For this particular recipe, use day old stale bread. Fresh bread does not usually hold its shape when added the wok. Cut the bread into pieces like the recipe mentions and sprinkle very little water and set aside while the onions fry up.

[edit] Ingredients

4

cups bread cut in to small pieces

½

cup chopped onions (optional)

2

tbl spns grated fresh/frozen coconut (optional)

3

green chilies

A pinch turmeric (optional)

6

curry leaves

A pinch asafoetida

½

tea spn each mustard seeds, cumin seeds, urad dal

1

tea spn sugar (optional)

TBSP Oil

Salt to taste

1

TBSP chopped coriander leaves

Step 1

Heat oil in a fry pan on a medium flame and add mustard, cumin seeds, urad dal.

Step 2

When the cumin and mustard start crackling, add curry leaves and chillies and fry for about about 1/2 a minute.

Step 3

Add onions and fry till they start browning.

Step 4

Now, lower the flame slightly and add bread pieces and mix well.

Step 5

Finally, add sugar, coconut, salt and mix well.

Step 6

Turn the flame off and garnish with coriander leaves.
