Fresh Tomato - Potato Soup

Ingredients

tomatoes
, peeled

potatoes
, peeled and quartered
A few fresh
basil
leaves
1 lg.
onion
, chopped small
Salt
and
pepper
to taste
2 tablespoons
olive oil
1 qt.
water
Preparation
1
Heat
all ingredients to
boiling
and
simmer
, uncovered, until potatoes are cooked, about 40 minutes. Put in
blender
and
puree
just until creamy for a thick soup.
Serve
garnished
with a sprinkling of Parmesan cheese on the soup.
