Make Gnocchi at Home

Gnocchi are small Italian dumplings made from mixing cooked starchy potatoes (i.e. Idaho) with flour. You can mix in other flavorings as well such as roasted red pepper, lemon zest, and herbs. This is a fun project to do with kids because they can help with rolling and cutting the dough. I know you can buy fresh gnocchi in your grocery store but it is sometimes fun to make your own. Gnocchi is as versatile as pasta in that it can be mixed with any sauce. If you have any left over, you can toss them in olive oil and roast them or pan fry them in a skillet. Either way, the gnocchi develop a gorgeous light brown crust.

Gnocchi

Ingredients:

5 pounds potatoes
2 cups flour
6 qt. boiling water
3 tablespoons salt
