Popeye Pizza

I first had this pizza in a restaurant in Spain believe it or not.  I loved it so much that I recreated it at home.  It has all the flavors of Greek spanakopita put in the form of a pizza.  I particularly like the contrast between the sweetness of the golden raisins and the saltiness of the feta cheese. 

Pizza is always a meal you can throw together in minutes especially if you have the pizza crust already made.  You can always buy pre-made pizza crust at your local grocery store but I really prefer mine homemade.  Better yet, you can make individual pizzas by using pita bread as the crust.

Popeye Pizza


½ cup frozen and thawed Spinach

½ cup Feta

¼ cup Golden Raisins

¼ cup Pine nuts

1 cup Mozzarella

½ cup Tomato Sauce

1 recipe Pizza Dough
