A Southern classic, gumbo hails from 18th century Louisiana. A rich and hearty soup often using meat or shellfish as the base, gumbo is characterized by how it is thickened: using African okra, French roux, or Choctaw/Cajun filé powder (made from sassafras leaves or bark).
