Make the Perfect Cheeseburger

Noted mad scientist Nathan Myhrvold and his co-author explain how the make the world's best cheeseburger in their latest video for Modernist Cuisine. As with all of his recipes, it doesn't seem nearly as easy as Myhrvold makes it out to be. 

Still, molecular gastronomy... ohhh ahhh.
