Meatless Monday: Vegan Risotto Primavera

Vegan risotto primavera from Amuse Your Bouche is a delicious and healthy meal.  Short grain rice is cooked slowly with vegetable stock until it becomes thick and creamy.  A variety of vegetables are cooked in a homemade parsley pesto and then added to the rice.  You can use whatever vegetables you have on hand for this recipe.  This hearty meatless meal can be prepared in less than an hour.  For full recipe instructions, click here.
