Quick and Easy Tuna Mexi Melts

April 1, 2014

Tuna mexi melts add some flair to this otherwise ordinary sandwich.  This meal only takes a few minutes to prepare and is perfect for days when you don't have time to spend in the kitchen.  Tuna is combined with a spicy homemade salsa and sour cream before being spread on a slice of French bread.  Each opened faced sandwich is topped with pepper jack cheese before its heated in the oven.
