I can't think of a better way to celebrate World Coconut Day than with a moist and fluffy coconut cake from I Heart Recipes. Cake is a symbol of celebration so whether your at a birthday party, graduation, or wedding, chances are cake will be there too.
This is the simplest coconut recipe EVER! A homemade white cake is covered in cream cheese icing and toasted golden brown coconut flakes. To toast coconut flakes yourself, simply place the sweetened coconut flakes on a dry cookie sheet and bake them for 3-5 minutes in a 350 degree oven. I like to use half plain sweetened coconut and half toasted coconut to give the cake a variety of textures and degrees of coconut flavor.
Since the only taste of coconut comes from the shredded coconut coating, it's mild compared to other versions of coconut cake (like the triple coconut cake). If you're serving this coconut cake exclusively to adults, feel free to drizzle some coconut rum between cake layers.
