Easy Thanksgiving Recipe: Cheesy Broccoli Casserole

If green beans are not your thing, this cheesy broccoli casserole is a tasty alternative to the classic Thanksgiving side dish.  Chopped broccoli and sauteed mushrooms are combined with sharp cheddar cheese and creamy mushroom soup before it is popped in the oven to bake.  The famous French fried onion rings top the casserole so you still get the irresistible onion flavor in each bite.  Other possible replacements for green bean casserole include creamed onion casserole and green bean casserole cups.

Cheesy Broccoli Casserole

Ingredients:

2 (10 ounce) packages frozen chopped broccoli, thawed
1/2 cup 
1 garlic clove, finely minced
2 tablespoons unsalted butter, plus more for casserole dish
1 (10 3/4 ounce) can cream of mushroom soup
1 cup grated sharp cheddar cheese
1 (2.8 ounce) can French fried onion rings
kosher salt and freshly ground black pepper, to taste

Directions:

Step 1: Preheat the oven 350 degrees Fahrenheit. Grease a casserole dish with butter.

Step 2: Melt the 2 tablespoons of butter in a skillet over medium high heat.  Add the minced garlic and cook until fragrant, about 30 seconds. Add the sliced mushrooms and chopped broccoli.  Cook the vegetables until the mushrooms begin to sweat, about 7 minutes.  Next, add the soup and cheese and stir until well combined and cheese has melted.  Mix in 2/3 cup French fried onions.  Season with salt and pepper.  

Step 3: Pour the broccoli and mushroom mixture into the prepared casserole dish. Bake the casserole until bubbly for 25 to 30 minutes.  Top the casserole with the remaining French fried onions and continue to bake for an additional 5 minutes. Serve hot.
