Classic Maine Lobster Roll

Lobster rolls are a luxury.  This simple sandwich is an example of pure decadence.  Succulent chunks of lobster are mixed with chives, lemon juice and mayonnaise before it piled high into a buttered roll with fresh basil and lettuce.  I know lobster is pricey so save this meal for a special summer occasion.  It is best enjoyed on the beach with a beer and potato chips.

Maine Lobster Roll

2 (1 1/4 lbs.) lobster, cooked and picked
3 to 4 Tbsp. mayonnaise
3/4 tsp. chives, fresh, finely sliced
1⁄2 tsp. lemon juice
salt and freshly ground black pepper, to taste
2 Frankfurter rolls, lightly toasted
1 Tbsp. fresh basil, chiffonade
1/4 Romaine lettuce, chiffonade
potato chips and pickles, for serving
