Summer Supper: Cajun Chicken Pizza

Summer eating means lightening up the family favorite recipes. We love to eat pizza every week, but it's nice to have something a little different once in a while, and this pizza is certainly different. 

From Foodista contributor Bing, and the first bite had us hooked. She writes that this recipe is inspired by a pizza she had in a cafe in New Zealand. Chicken with barbeque sauce, cream cheese and apricots, give this a lighter than air flavor; perfect for spring dinner and really unique. It's the combination of sweet, spicy, creamy, and crunchy that grabs you. The dough is actually spread extremely thin and baked before topping. That makes it especially crispy (one of our favorite ways to enjoy pizza dough) and helps it hold up to the copious toppings. 

Throw a light salad together, and enjoy a filling meal that is perfect for these warmer days. 

Cajun Chicken Pizza

For the crust-
1 1/2 cups plain flour
1 teaspoon heaping baking powder
1 tablespoon sugar
1 teaspoon salt
1 tablespoon heaping corn flour
2 tablespoons extra virgin olive oil
1/2 cup water (or more if necessary)
For the filling-
500 grams chicken thigh filets, boneless and skinless
125 grams cream cheese
400 grams canned apricots (drained)
1 cup grated mozzarella cheese
4 tablespoons BBQ sauce
a few sprigs of thyme
Cajun seasonings
1 tablespoon plain flour
2 tablespoons cooking oil
 
Preparation
 
1 Preheat an oven to 200°C.
2 Add the plain flour, baking powder, salt, sugar, extra virgin olive oil, corn flour and water into a large mixing bowl.
3 Combine the ingredients loosely with a fork or chopsticks.
4 The dough will start to form as you knead the flour into the water.
5 Knead the dough well until it becomes a smooth elastic ball. Add more water if necessary.
