Zucchini is one of those farmers market offerings that is sort of like the Energizer bunny. There is no more prolific vegetable that grows so fast  there is no way to keep up , even if you are a devoted fan. No way, unless you have an arsenal of delicious recipes on hand to use all that great zucchini bounty.

Depending on the size of the veggie, zucchini can be used for a wide variety of foods, everything  from sweet to savory. If you are ready for it, zucchini makes a frugal and delicious part of your food pantry. Here are 5 ways to use zucchini, so you can appreciate the gift basket of them from  your neighbors!

Dip is a great way to use zucchini. It is also a wonderful way to get kids to eat their veggies! With the farmers markets overflowing with fresh vegetables, why not add this creamy dip and put out a platter of healthy treats for the family?

Rich and satisfying, this dish is a regular in our kitchen. Your family will never know they are eating a vegetable as the main component.

We take our excess zukes, blanch them, jar them with some garlic and pressure can them. Bad texture and not very good -- Until you put that in a food processor/blender and use as a soup base. Add beans, meat of choice, tortillas, etc. to make a wide range of winter soups.
