If you are talking about the communion in a Christian wedding ceremony, the wine symbolizes the blood that Christ shed when he died. If you are talking about wine at the reception- I would guess that it is just tradition. Wine was a typical beverage in times when you couldn't run to the store and buy bottles of other beverages and before homes had running water.
