If you are talking about the communion in a Christian wedding ceremony, the wine symbolizes the blood that Christ shed when he died. If you are talking about wine at the reception- I would guess that it is just tradition. Wine was a typical beverage in times when you couldn't run to the store and buy bottles of other beverages and before homes had running water. Wine would keep and you would be prepared for unexpected guests.
