My sister-in-law just visited Thailand and she said they dip fresh pineapple slices into sea salt mixed with crushed red peppers. I tried it and the flavors were awesome together.

Chicken Satay skewers would be fun and relatively easy. You can also make your own crab rangoon appetizers without much trouble. Coconut shrimp is always a hit as well.
