I assume you are referring to the flour? If so, maida flour is a finely-milled wheat flour, somewhat resembling cake flour or starch. It is commonly used in Indian cuisine, for such things as naan, as well as Southeast Asian cuisine. Here in the US, pastry flour can be used as a substitute.

Maida is a finely ground wheat flour used in in making Indian breads...similar to pastry flour in the US of A.
