My recipes call for oil.
I always use butter and win a lot of blue ribbons with my recipe!

The answer is actually all of the above. Butter burns, so be careful to bake it for less time, but oh it's so good!
I actually use canola oil, the bread seems to yield a more dense, moist result.
Leaf Lard is used by bakers to make excellent pie crust.
