Yorkshire Pudding is sort of like a popover but usually made using meat drippings as the fat. Is it traditionally served with a roast beef dinner and made using the drippings from the roast. However, any kind of hot fat will do in a pinch, you can even make it with canola oil. Personally, I think the meaty flavor from drippings is nice, so if you don't have a roast handy, try using some lard.
Many people like to use a muffin pan so they can make individual puddings for their guests. The most important things to remember with this dish are: Make sure the fat is very hot before pouring in the batter and once you put it in the oven don't disturb it, or it will fall.

Also try adding some fresh herbs to the batter like chives, tarragon or rosemary! Or add all 3!
