Bread Pudding- حلوى خبز بالكسترد-بودنج

Ingredients

Bread Pudding Ingredients:
2 cups Milk- You may use low fat or skim milk for a lighter dessert
2 teaspoons Vanilla
2/3 cup Sugar
1/4 cup Walnuts
1 teaspoon Cinnamon
2 tablespoons Butter
2 tablespoons Sugar

Preparation

Mix Milk, Egg Substitute, Vanilla and Sugar to prepare the custard.

prepare the French bread by cutting it into small pieces and toasting it in the oven to a golden crisp.

At this point add the walnuts, add the cinnamon and you may add raisins too

Pour the custard mix on top of the bread pieces and let stand for couple of hours in the fridge.

Butter the baking container and add a little sugar on the bottom of the baking pan to get a nice caramel color and taste on the top of the pudding once you flip it into a serving platter.

Ladle the pudding into the baking container.

Bake in the preheated oven and in a water bath or what is known by Bain-marie . It should bake in a 350 degrees Fahrenheit oven for 35-45 minutes, or until the edges are brownish and the custard is set.

This is a low fat recipe for Bread Pudding. I chose to use skim milk and egg substitute instead of whole eggs, but if you do not have any in a market near you, you may use couple of eggs and four egg whites, this will guarantee a less fat content in your pudding. I also used fresh French bread, although in the classic recipes they use day old bread. The fresh bread turned out fine. I toasted it in the oven to get it crispy and golden in color. I also added a little butter to the baking pans and mixed it with sugar to get a caramelization on the bottom of the pudding that you will get when you flip the pan in a platter. . I admit, the more butter and sugar you use, the tastier it is, but this is an alternative recipe if you are on a low fat diet. I personally think that a generous topping of caramel or fresh whipped cream makes it very delicious. Having said that, my light recipe was not so bad after all. You may add raisins to the pudding if you like. I have seen recipes with added dry cranberries to the it. At the end, it is all up to you on how you want to garnish or add anything of your choice to the pudding.
