- 1/2 cup Dried bread crumbs
- 1/2 cup All-purpose flour
- 1 tablespoon Fresh parsley, chopped
- 1 teaspoon Dried basil
- 1/2 teaspoon Salt
- 1/2 teaspoon Paprika
- 1/4 teaspoon Ground black pepper
- 1 Lemon (for juice)
- 2 tablespoons Butter or margarine, melted
- 2 tablespoons Vegetable oil
- 1 Chicken, cut into pieces
Instructions
Step 1
Preheat oven to 350 degrees F.
Step 2
In a small brown paper bag, combine dried bread crumbs, all-purpose flour, chopped fresh parsley, dried basil, salt, paprika, and ground black pepper. Seal the bag and shake to mix thoroughly.
Step 3
In a large bowl, combine the lemon (for juice), melted butter (or margarine), and vegetable oil. Add the chicken pieces, turning to coat them completely.
Step 4
Working with a few pieces at a time, place chicken in the bag with the crumb mixture and shake to coat evenly. Arrange the coated chicken pieces on a 15x10x1 inch baking pan.
Step 5
Bake in the preheated 350 degree F oven for 45 minutes or until the chicken meat is no longer pink near the bone.
