- 1 tablespoon olive oil
- 1/4 cup sliced green onions/shallots
- 4 clove large garlic, minced
- 8 ounce halibut fillets
- 4 slice prosciutto, cut into strips
- 2 tablespoon lemon zest
- 4 tablespoon chopped fresh Italian parsley
- 2 tablespoon chopped fresh chives
- 1/2 teaspoon freshly grated black pepper
- 1/4 teaspoon salt
- 1 cup white wine
- 1 stick butter
- 1/2 cup heavy cream
- 1/2 lemon juice
- 2 tablespoon capers, rinsed
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
In a medium skillet, warm 1 tablespoon olive oil.
Step 3
Sauté the green onions/shallots and minced garlic. Do not brown the garlic.
Step 4
In a medium bowl, mix together the lemon zest, Italian parsley, chives, pepper and salt.
Step 5
Place the halibut fillets onto the mixture and coat all sides of the fish.
Step 6
Place the herb-coated fish into the olive oil-shallots-garlic mixture in the skillet. Toss in any remaining herb mixture.
Step 7
Cook the fish for 2 minutes on each side or until slightly golden. Do not overcook.
Step 8
Place fish in an oven-proof dish in the hot oven while preparing the rest of the ingredients for the sauce.
Step 9
In the skillet that the fish was cooking in, place the prosciutto strips in whatever onions, garlic, and herbs remain. Cook for about 5 minutes.
Step 10
Remove prosciutto and put to the side.
Step 11
In the skillet, add the white wine. Cook the wine down to about a quarter cup of liquid.
Step 12
Add the butter, heavy cream, lemon juice, and the capers.
Step 13
Re-add the prosciutto strips back into the sauce and warm.

Taste and adjust the ingredients to your preference.
Step 15
Remove the fish fillets from the hot oven and plate them.
Step 16
Pour the prosciutto cream sauce over the fillets and serve with a beautiful green vegetable!
