  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 tablespoon light olive oil
  • 1 cup cool water
  • 1 teaspoon yeast
  • 1 cup whole wheat (4oz)
  • 1 cup rye (1oz)
  • 1 teaspoon apple cider vinegar
  • 1 cup bread flour (7oz)
  • 1 tablespoon gluten
  • 2 tablespoons dry skim milk (Carnation)

Step 1

When measuring honey, use a tablespoon measure right after measuring the oil to help the honey slip out easily.

6 hours

Mix the first ingredients (honey, salt, light olive oil, cool water, yeast, whole wheat, rye, and apple cider vinegar) together. Cover the mixture and let it sit at room temperature.

15 minutes (knead), 30 minutes (rise), 1.5 hours (rise), 50 minutes (bake), 30 minutes (rest)

If using a programmable bread machine, add the remaining ingredients (bread flour, gluten, and dry skim milk) to the fermented mixture. Set the machine to knead for 15 minutes, then rise for 30 minutes, punch down, and rise again for 1.5 hours. Bake the bread at 375°F for 50 minutes. Let the bread sit in the pan for another 30 minutes, then cool completely.

30 seconds (microwave)

For bread machines that cannot be programmed, use warm water instead of cool water (microwave cool water for 30 seconds to warm) and select the dark crust setting. For a timed setting, layer the ingredients by first adding the bread flour and other remaining dry ingredients on top of the fermenting wheat/rye mixture, then place the oil and honey on top of that. Do not cover with plastic.
