Grilled Chicken Fajitas

Ingredients

4 tablespoons Vegetable oil
4 tablespoons Lime juice
1 1/2 teaspoons Cumin
1 teaspoon Salt
1/2 teaspoon Pepper
2 teaspoons Hickory Seasoned liquid smoke

Preparation

Mix marinade and place chicken in and coat. Put in refrigerator until ready to grill. Grill chicken turning 3 times until browned and cooked throughout approximately 20-25 minutes. Cut up chicken to serve as your fajita meat. Serve this meat with grilled onions, green peppers and mushrooms along with fat-free cheese. Serve in fat-free flour tortillas.

Here is my recipe for the diet exchange. These are very yummy! I think the key to getting the correct flavor is the hickory seasoned liquid smoke flavoring. I wouldn't do chicken fajitas any other way!! Jacque
