- 1 tablespoon lemon juice
- 1 tablespoon white wine vinegar
- 3 cloves garlic, mashed and minced
- 5 Japanese eggplants
Instructions
Step 1
Place eggplants over burners on a gas stove. At high heat, char skins, turning eggplants to burn skins evenly. This takes about 10 minutes. Alternatively, broil eggplants 4 inches from the heat source, turning often, for about 15 minutes. Transfer eggplants to a plate to cool slightly.
Step 2
Place one eggplant at a time on a cutting board. Hold the stem end and scrape the charred skin away from you with a knife. After skins and stems have been removed, coarsely chop the eggplant and place it in a glass or ceramic bowl. Add the mashed and minced garlic, white wine vinegar, lemon juice, salt, and pepper to taste. Chill before serving.
