This grilled pineapple salsa is the perfect summer condiment. In my opinion, it is far superior to canned or jarred brands.It is fresh, flavorful, and healthy. Grilling fruit brings out their natural flavors so it is sweeter and the char adds another dimension of flavor to the salsa. You can top steaming grilled fish or chicken, toss it with a salad, or eat it plain with chips.
Ingredients:
1/2 of a fresh pineapple (see tip)
1 small red bell pepper, dice
1 jalapeno, seeded and minced
4 Tablespoons chopped cilantro
2 limes, juiced
Salt and pepper
Directions:
Grill the two slices of pineapple on a grill pan over medium high heat (or better yet, fire up the grill) for about 8-10 minutes per side, being careful to avoid burning.
Let the pineapple cool and slice into small cubes, about 1/2 inch.
Combine the pineapple, red pepper, cilantro, jalapeno and lime juice.
Season with salt and pepper, mixing well.
