Pumpkin Cake Rolls

Give your holiday baking a little twist. Instead of the tradition Swiss roll, bake a Pumpkin Roll with cream cheese filling. This recipe comes to us from Life as a Lofthouse, who was inspired by her own mother's holiday pumpkin rolls. 

Pumpkin Rolls

- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 tsp lemon juice
- 2/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 8 ounces cream cheese, softened
- 4 tbsps butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla
