Vegan Quinoa Salad with Balsamic Vinegar

Go light for you next dinner with a Vegan Quinoa Salad. Not only is it animal-free, this salad is also free of gluten. From Avocado Pesto, this recipe has plenty of vegetables, making it hearty enough for dinner. Plus, it will only take you a half hour to make. 

Vegan Quinoa Salad

Ingredients:
- 2 tbsps olive oil
- 1 cup quinoa
- 1 3/4 cup water or vegetable broth
- 4 cloves garlic, minced
- 8 ounces button mushrooms, sliced
- 6 sun dried tomatoes, diced
- 6 large cherry tomatoes, halved or quartered
- 2 handfuls salad greens
- 1-2 tsps balsamic vinegar
- salt and pepper to taste
