Low Calorie S'mores Cups

We have all fallen victim to our sweet tooth.  Sugar lures us with the promise of a square of velvety chocolate, a moist slice of freshly baked cake or a rich scoop of ice cream.  Time and time again, we are hypnotized by the pleasure of desserts.  These s'mores cups help you take back a wee bit of that control.  While you are not totaling eliminating all the goodness from the equation, you are certainly reducing it.  If you find yourself yearning for something sweet, turn to this low calorie recipe for relief.

Low Calorie S'mores Cups

Ingredients:
1 cup graham crackers, crushed
1 tablespoon cornstarch
4 tablespoons unsweetened cocoa powder
1/4 cup SPLENDA® No Calorie Sweetener, Granulated
1 cup skim milk
Egg substitute equal to one egg
1/2 cup mini marshmallows
1/2 teaspoon vanilla extract
36 mini marshmallows (to decorate)

Directions:

Step 1: Spoon 2 teaspoons of crushed graham crackers into the bottom of 12 two-ounce shot glasses.

Step 2: In a medium bowl combine cornstarch, cocoa powder, and SPLENDA® No Calorie Sweetener, Granulated and stir with a whisk until combined.

Step 3: Heat milk in a medium saucepan over medium heat. Add dry mixture to milk and stir well with a whisk to combine ingredients. Cook over medium heat for 4 minutes or until mixture begins to bubble, stirring frequently.

Step 4: Add egg substitute to mixture and continue to cook for another minute. Remove from heat and stir in 1/2 cup mini marshmallows and vanilla. Stir until marshmallows are completely melted.

Step 5: Spoon 2 tablespoons of the hot pudding mixture into each shot glass over the crushed graham cracker. Top with an additional 2 teaspoons of crushed graham cracker. Refrigerate until cool.

Step 6: Before serving, top each pudding parfait with 3 toasted mini marshmallows.
