2 Tablespoons Baking Powder
3 Medium Eggs
1 Teaspoon Salt
Raspberry Filling Recipe:
125 g (1 cup) Fresh Raspberries
250 g (1 cup) Mascarpone Cheese
60 g (1/2 cup) Icing Sugar
Chocolate Buttercream Icing Recipe:
340 g (1.5 cups) Unsalted Butter
40 g (½ cup) Cocoa Powder
340 g (2 cups) Icing Sugar
150 ml (10 TBSP) Milk
100 g (3.5 oz) Dark Chocolate

For the Cake:
2 cups all-purpose flour
2 cups sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
1 teaspoon instant espresso
1 cup heavy cream
½ cup vegetable oil
2 eggs – room temp
2 teaspoons vanilla extract
½ tsp almond extract
1 cup boiling water
For the Icing:
1½ cups butter (3 sticks) – let cool completely to room temperature
1 cup unsweetened cocoa
5 cups confectioner’s sugar
½ cup milk
2 teaspoons vanilla extract
½ teaspoon instant espresso
