Question: Why don't stores sell beet tops (greens).

Our local produce farm, farmer's markets and grocery stores cut the tops off of the beets and throw them (the tops) away. I would rather eat the tops and throw the root away. When I asked about the tops at the local farm, they told me that they cut the tops off in the field and only send the roots to their little market. Why?

It could be that there is not much demand for them and it's more cost effective and easier to transport the beets (think about packaging ) than selling them with the tops. Ask them to save the tops for you so you can pick them up or reserve some with the tops on for you.
I'm with you, why would you throw away the tops? They're delicious!
