Question: i need to do my coursework and i am going to try something like a sponge base with strawberry compot covered ind milk chocolate sauce could anyone help me with a recipe?
For the chocolate- why don't you make a simple chocolate ganache? It's really hard to screw up as long you don't burn the cream.
4 OZ CHOCOLATE- CHOPPED
2 TBSP BUTTER
1/4 TSP SALT
1/4 CUP HEAVY CREAM
Place the chocolate butter and salt into a small bowl. in a small saucepan, heat the cream until just boiling. Remove from heat and add 1/2 the cream to the chocolate mixture. stir to combine and melt the chocolate and butter. when smooth, add the remaining cream, stir well. Set aside and cool to room temperature.
If you're using milk chocolate vs bittersweet- be very stingy with the sugar in the compote- it could end up being way too sweet and cloying. If you make your compote too sweet- add a little lemon juice to cut that a bit.

why not try a sponge base with strawberry compote then maybe a chocolate mousse? if done properly in a nice mould it could have great visual effect :)
